January

So I thought it'd be fun instead of updating this regularly just to do one post a month...Just Kidding! It's just not been on my mind lately. So sorry! But here's what we've been up to:

We celebrated my birthday January 10th with a SUPER yummy red velvet cake and dinner with friends. Then that Saturday, January 14th, we celebrated Wyatt's 2nd birthday with Todd and Beth and their family with pizza and cupcakes! It was fun! Wyatt got lots of fun things for his birthday (which I've only gotten halfway thru the thank you cards...getting a 2 year old to write his thank you cards is so challenging ;)  But we're almost there!

Robb has had several rides going out this month keeping him out and about with this unusally warm winter. He's been working on getting some things reorganized around the barn and a little more how he wants everything set up. It looks so good!

The horses are enjoying some time off from the crazy seasons and are getting silly. It's always fun to look out and see them playing and chasing each other around. We traded the mule for a new horse a little while back, so our new addition, Rango, is getting settled in.

We took a trip down to Kernersville to visit and catch up with everyone there. Picked up some more furniture for the house and have spent most of this week getting everything moved around and set up. Wyatt is in a big boy twin bed (soon to be bunk beds) and loving it! Cole has moved into his own room and is also apparently loving it as his sleep has improved very much. He's actually waking up laughing and happy now! Such a great, MUCH needed change for all of us :)

I think that sums up what we've been up to lately. Work has been getting busier for me with a big season getting geared up so I've been a little more tied up with that lately.

I know I know...

I haven't updated in a month, but things got a little busy around here and by the time I thought about this in the evenings, going to sleep a little earlier won. No offense. BUT, here I am and here's the latest happenings at Chunky Gal....

Robb started the month off with a trip to Denver to see his cousin, Lauren, get married. He said it was a good trip and nice to see some of the family he doesn't get to see much anymore. The wedding was nice, it just would've been nice to have some more time to visit with people and do a little site seeing, but it was a quick weekend trip out and back.

We had a great Holiday season both with family and with the business. We got to spend some quality time with both sides of the family this year instead of rushing around trying to see everyone in two days, so to me, that was a big plus and very nice. Everyone ate and was very merry :) I think Wyatt enjoyed Christmas a little more this year realizing slowly what's going on. We attempted to visit Santa...which didn't end well...the only way Wyatt would even get near Santa was to cling to me, thus Momma was in the picture with Santa. Cole didn't seem to mind ;)


Christmas Eve Wyatt fell and busted his lip...and had a very impressive puffy lip the next day for pictures and family fun.

After Christmas we were pretty busy with things around the farm. Lots of rides in a short amount of time. But we had great customers and it was a very pleasant couple of weeks visiting with everyone on the rides. We saw a lot of familiar faces (which we always love) and some new ones as well. We're getting to the point now where we're really getting to know some of our families that are riding with us and we're seeing them grow and change. That's pretty cool :) It's always neat to me when someone comes to ride and says "You were pregnant with Wyatt the last time we were here" or "You guys had just gotten married", it's so nice that people care enough to remember those things. That means a lot!

We had a wild and crazy New Years Eve (I think we were all asleep by 10:00pm, except for Robb who did stay up to ring in the New Year).

Both boys are teething...so that's been fun for Momma and Daddy. Cole is slowly getting on a schedule and learning about sleeping when he's supposed to, not just whenever he feels like (or doesn't feel like it at 3:00am). So that's helping. Wyatt is learning a ton of new words and starting to talk all the time. He can even say Octopus and Basketball!  We're working on letters and numbers right now and he loves to count and say the alphabet. I can't believe he'll be 2 in a few days!! Where did the last 2 years go???? Both boys are growing and changing so fast!!

December? Already?

Where has this year gone??? I was just sitting here thinking about how much has gone on this year and I can't believe that it's already December! Craziness!

We've been getting everything ready for the crazy end to the year coming up with holiday travels, crazy busy times at the barn, and all the fun that comes with it. Christmas shopping is almost done. The decorations are up. Everyone is slowly getting healthy again (Cole still has a little bit of a bug). We're almost ready for the Holidays!

I can't believe how much the boys are changing and so quickly!! We were getting ready for bed last night and they were both on Wyatt's bed playing and Cole rolled over to Wyatt when he laid down beside him and snuggled up. The CUTEST thing I have ever seen and made me so happy to see the love they already have for each other. I can't believe it. I can't believe how much Wyatt already loves his brother and he's only had a few months to adjust to sharing the attention and he's doing amazing with it. He loves to help us with Cole and does things to help without us even having to ask (Cole gets fussy, Wyatt will go get his blanket and paci and bring it to us). I'm so glad they've got each other. I know it's only going to get more and more entertaining :)

Not too much else is new. We've been keeping everything pretty low key lately trying to get caught up around the house/farm with things and get everyone healthy again.

Good Recipe

We tried a new recipe last night that I am pretty excited about so I thought I would share. Creamy chicken spaghetti casserole This is so simple and soooo tasty! I would recommend doing a little less pasta than what it calls for. It says a pound and I did a little less and it was still too much, so maybe 3/4 pound would be good. Wyatt LOVED this (who knew?) and went a little bananas for the olives and mushrooms in it. I also used canned mushrooms instead of the white mushrooms and it was tasty, so I think whatever kind of mushrooms you like would work well. Super yummy! :)

Holiday Fun

When it rains...

it pours! Literally and physically this week for us. Lots of rainy weather and lots of stuff going on here this week. Both boys are sick, we've had truck troubles, septic issues...but today is Friday, that means it's over right? :) Both boys seem to be getting better slowly. The truck is fixed. The septic is fixed. We're good to go! Or so we hope!

We've been getting ready for the holiday season. Robb's been getting all the horses' feet in gear and ready to go (he's learned how to be our own farrier! yay!) All the horses that were having issues have gotten lots of rest and are ready to go again. Everyone is healthy and happy (well except for Guy, but he's generally grumpy anyways).

We're excited for Thanksgiving week with lots of people in town and lots of family. As long as the boys get to feeling better, we'll get to see both sides of the family and catch up with everyone. Cole is getting so big and changing so fast, I really hope he gets better so we can go and visit. He's so pitiful right now, we just want him to get better. He did give us lots of smiles tonight, so I'm hoping that's a sign the medicine is starting to kick in and at least take away the pain from the ear infection.

We had some friends in town last weekend and enjoyed spending time with them. Their daughter is the same age as Wyatt (older by 4 weeks). So the two of them had fun playing together.

Wyatt is really enjoying daycare now. I went to pick him up today and he didn't want to leave, so I took that as a good sign he's enjoying it :)

Back in the Saddle


We have been so busy  lately!! I feel like we haven't had a weekend to rest until this past weekend (and that was not the case for Robb, still had rides going out). For Halloween we went down to Brevard to visit and went to the Halloween Festival they have in town. Wyatt dressed up as a cowboy:


Cole was a bear, who hibernated through the whole festival. :)

Robb's been busy with a steady stream of rides with all the people in town for the fall.  So that's been good. I even got back in the saddle this past weekend with Robb cheering me on and helping me get by bearings again. Felt good! :) Wyatt got to ride all by himself for the first time too! He rode some with Robb and then all by himself. I can't believe he's getting so big!!!


Cole is doing great! He's a litte crazy some days, but those nights are heaven!! :) All in all he seems to be coming out of the newborn fog and is starting to explore a little more each day. He loves to lay on the floor and kick his legs and make fun sounds. He really loves the little bear mobile we have over his little crib. He thinks its so funny! He's still not so sure about Wyatt and gets that concerned look sometimes when he's near by (which makes us laugh).
